Flour + Grainless Muffins

These muffins are two things: simple + ridiculously delicious. Muffins are one of my fav on-the-go options. Now, I love to bake as much as the next girl, but often find that muffin recipes have a seemingly endless list of ingredients and by the time I've finished reading the recipe I have lost all motivation to even make the dang things. The best part about these is you can switch up the spices + additions easily for a new twist on the original recipe. All you need is 15 -20 minutes and a blender. Enjoy! 

++ ingredients 

  • 1 cup peanut butter

  • 2 eggs

  • 1 teaspoon vanilla

  • 1/2 teaspoon apple cider vinegar

  • 2 tablespoons maple syrup

  • 2 bananas

Preheat oven to 400; blend ingredients + distribute into lined muffin pan 

Bake for 15 minutes, let cool + devour 

optional add-ins : chocolate chips, nuts, diced apple, blueberries, orange zest, cinnamon, caramel, cranberries, flax seeds, raisins, oats  

{these can be made vegan by using chia eggs as substiute for regular eggs}
