Oatmeal Pumpkin Breakfast Cookies


Ever look through the breakfast aisle at the grocery store and wonder why every single product advertises a natural recipe but the ingredients are anything but? Me too. Something like an oatmeal pumpkin breakfast cookie should have pretty much just oats + pumpkin, right?! That's why I'm so excited to share these soft + dense nutritious cookies that are sure to keep your taste buds wanting more {without all the extra additives!}


  • 1 cup pumpkin puree

  • 2.5 cups oats

  • 1 teaspoon cinnamon

  • 1 teaspoon pumpkin pie spice

  • 1/2 teaspoon pure maple syrup

  • pumpkin seeds for topping

Preheat oven to 350 degrees

Mix all ingredients into a large bowl, then using your hands create cookie shape (I recommend a flatter cookie shape for thorough cooking since the pumpkin puree can make it pretty dense) 

This recipe makes approximately 10 cookies, but I make them pretty large (I mean who doesn't like big cookies?!)

Bake 12 minutes, top with pumpkin seeds immediately after removal from oven. You won't want to place them on before since the heat can be damaging to the seeds and we want alllllll the zinc they have to offer!
